"Veggie Quiche"


 

Ingredients

  • 1 cup water
  • 1 lb. Tofu, extra firm
  • 2 ½ Tabs. cornstarch
  • 1 Tabs. lemon juice
  • 1 ½ tsp. salt
  • ½ tsp. oregano
  • 1 ¼ tsp. basil
  • ¼ tsp. savory
  • ¼ tsp. garlic powder
  • ¼ tsp. dill weed
  • 1 ½ tsp. chicken style seasoning [under seasonings]
  • 1 cup grated raw carrot*
  • 1 ½ cup grated raw zucchini*
  • 1 cup diced onion

*This is also very tasty using a 10 oz. pkg. of frozen ,chopped and drained spinach in place of the carrot and zucchini.

Steps

  • Place all but last 3 ingredients in a blender and blend until smooth.
  • Place blended mixture in a large mixing bowl and stir in the grated vegetables and onion.
  • Place in a 9-inch un-baked pie shell and bake at 350 degrees for 50 minutes.
