Blend together until smooth all ingredients except the potato flour, adding just enough water so the tofu will blend.
While blender is running, add 2 Tbs. potato flour and continue blending about 30 seconds for mix to thicken.
Blend about 30 seconds more after the last of the potato flour has been added to make it look smooth and satiny.
HINT: Make sure you are using potato flour, not potato starch. Also, insufficient blending will result in a mealy appearance from the flour. Too much potato flour will make it gummy and starchy, so try to learn the right balance.
