Ingredients
- 5 ½ cups whole wheat bread crumbs
- 1/3 cup unsweetened coconut
- 16 oz. can unsweetened peaches
- 2 ripe bananas
- ½ cup orange or pineapple juice
- 1 ½ tsp. vanilla
- 1/8 tsp. almond extract
- 2 bananas, sliced
- 2 cups raisins
Steps
- Combine the bread crumbs and coconut and set aside.
- Blend peaches, ripe bananas, pineapple juice, vanilla, and almond extract.
- Layer in a 9x13 inch baking pan as follows:
- Peach sauce
- Crumb mixture
- Banana slices
- Raisins
- Continue layering and end with a layer of crumbs.
- Bake at 350 degrees for 30 minutes or until golden brown. Serve warm.
Hint: This will not set up like a regular cake. You will need to dish it out with a serving spoon.
