"Palak - Indian Spinach & Tofu"


 

Ingredients

  • 12 oz. extra firm tofu [water packed]
  • 10 oz. pkg. of fresh spinach leaves
  • 4 cloves garlic
  • 1 inch piece ginger root
  • 4 green chilies
  • 1 large chopped tomato
  • ½ tsp. turmeric powder
  • salt to taste
  • small amount of turmeric
  • 1 large chopped onion

Steps

  • Wash spinach leaves and steam until tender.
  • In a food processor, blend to a smooth paste.
  • Cut the tofu into medium cubes.
  • Sauté the tofu in 1 Tab. oil until golden.
  • Pulse the garlic, ginger, and green chilies to a fine paste.
  • Sauté the chopped onion in 1 Tab. oil until tender.
  • Add the masala paste and cook for 2-3 minutes.
  • Add the tomato and cook until it becomes soft.
  • Add the spinach paste, salt, and turmeric powder and cook for 4 minutes.
  • Add the sautéed tofu pieces, cook for a few minutes and remove from the heat.
