Ingredients
- 12 oz. extra firm tofu [water packed]
- 10 oz. pkg. of fresh spinach leaves
- 4 cloves garlic
- 1 inch piece ginger root
- 4 green chilies
- 1 large chopped tomato
- ½ tsp. turmeric powder
- salt to taste
- small amount of turmeric
- 1 large chopped onion
Steps
- Wash spinach leaves and steam until tender.
- In a food processor, blend to a smooth paste.
- Cut the tofu into medium cubes.
- Sauté the tofu in 1 Tab. oil until golden.
- Pulse the garlic, ginger, and green chilies to a fine paste.
- Sauté the chopped onion in 1 Tab. oil until tender.
- Add the masala paste and cook for 2-3 minutes.
- Add the tomato and cook until it becomes soft.
- Add the spinach paste, salt, and turmeric powder and cook for 4 minutes.
- Add the sautéed tofu pieces, cook for a few minutes and remove from the heat.
