Ingredients
- 2 ripe tomatoes
- 1 cucumber
- 1 green pepper
- 1 clove garlic, minced
- ½ cup fresh herbs or 2 Tbs. dry herbs: parsley, thyme, basil or tarragon.
- 1 Tbs. olive oil
- 3 Tbs. lemon juice
- 2 cups chilled water or vegetable stock
- 1 onion
- 1 tsp. salt
Steps
- Chop the vegetables fine.
- Slowly add the liquids, then the onion and salt.
- Chill for 4 hours before serving.
- Garnish with dry bread crumbs.
