"Cranberry Sauce"


 

Ingredients

  • ½ cup frozen pineapple juice concentrate
  • ½ cup frozen raspberry "passion" juice concentrate
    [make sure to stir concentrates after thawing before measuring].
  • ¼ cup honey
  • 12 oz. fresh cranberries
  • 1 tsp. orange peel-grated

Steps

  • In a heavy sauce pan, bring first 3 ingredients to a boil, add the cranberries, then reduce the heat.
  • Boil the mixture gently for 5 to 10 minutes, until the skins pop. Remove from heat when thick.
  • Let cool slightly before adding the grated orange peel.
  • Chill.

Serves 12.
