Ingredients
- ½ cup tofu
- ¾ cup water
- ½ cup applesauce
- 2 Tbs. honey
- ¾ cup cornmeal
- ¾ cup corn flour
- ½ cup whole wheat pastry
- 1 Tbs. baking powder
- 1 tsp. salt
Steps
- Blend tofu, water, and honey in blender until smooth.
- Place mixture in large bowl with applesauce.
- Stir in the remaining ingredients and stir briskly.
- It will be stiff compared to average corn bread, more like dropped biscuits.
- Spread into an 8x8 pan or scoop into sprayed muffin tins.
- Bake at 375 degrees for 20 to 30 minutes.
