"Ambrosia"


 

Ingredients

  • 1 can lite coconut milk, stir before pouring out
  • ¼ cup pineapple juice concentrate
  • 1/3 cup Minute Tapioca
  • 3 Tbs. honey
  • ½ cup dried unsweetened coconut
  • 1 tsp. vanilla
  • 1 14oz. can crushed, unsweetened pineapple, drained
  • 2 cups seedless grapes, cut into halves
  • 1 14oz. can unsweetened mandarin oranges, drained

Steps

  • Stir the frozen pineapple juice after thawing and before measuring.
  • Combine the coconut milk, frozen pineapple juice, the tapioca and honey.
  • Bring to a full boil in a saucepan over medium heat, stirring constantly.
  • Let this mixture cool.
  • Add the coconut, vanilla, pineapple, grapes and mandarin oranges.
  • Mix well and refrigerate.
  • Serve chilled with soy whipped topping or coconut cream topping.
  • Top it off with a cherry.
